Sweet Pork Recipe

Thanks to all those who came to our provident living night!! We had fun learning about canning. Here is the recipe for Sweet Pork. It is similar to what you get at Costa Vida or Cafe Rio:

28 oz. enchilada sauce ( I had red and green and I used them both)
2 4 oz. cans of diced green chilis
1/2 - 1 can soda pop (I used caffeine free Pepsi but you can use Dr. Pepper or Root Beer)
1 1/2 cups brown sugar
3 - 4 lbs pork roast (I sliced mine with a slicer to make it easy to put in jars.)

You can either cook this in a crock pot until tender and then can it. Or you can put raw pork in the jars 3/4 full then fill with sauce. Get rid of the bubbles with a knife which helps the sauce get down there. Process pints for 75 minutes or quarts for 90 minutes. It had a lot of liquid when I raw packed it. I had to cook it a long time to cook down the liquid.
